Cooking Tips
  1. Preheat the oven to 100ºC.
  2. Place the square cut ribs in a roasting tray, season with coarse sea salt and black pepper, drizzle with oil, then rub all over. Cover tightly with a double layer of tin foil, then cook for 7 to 8 hours, or until tender.
  3. After such time, transfer the ribs to a baking tray. Skim or remove the fat from the roasting tray and add 180ml of tomato sauce, 150ml of stout or other dark beer, 4 tablespoons worcestershire sauce, 4 tablespoons golden syrup, 4 tablespoons malt vinegar and 1 teaspoon of english mustard.
  4. Place the roasting tray over a high heat on stove top and bring the juices to a boil, then simmer for around 10 minutes, or until the sauce has thickened and coats the back of a spoon.
  5. Brush the sauce onto the ribs so they’re coated all over, then return the ribs to the oven for 20 minutes or until sticky and caramelised to your liking.

    I cooked these tonight in the slow cooker with a honey bourbon sauce. It turned out to be the most delicious thing I’ve cooked this week. Ordering more now as we’ve got friends coming around next weekend. Can’t wait to try the rest of the things we bought from meatbox
