2. Heat a skillet or frying pan over medium to high heat.
3. Quickly sear the meat about 5 seconds on each side then remove from frying pan.
4. Melt and brown 2 tablespoons of butter in the frying pan, then return steaks to the frying pan, and fry a further 4 to 5 minutes on each side.
5. The outside of the meat should be browned and caramalised. Remove from pan and let stand for about 5 minutes for the juices to settle.
