Cheesy Kransky and Potato Tray Bake

Smoky, cheesy and full of hearty winter flavour, this easy tray bake is made for cold weeknights. Golden potatoes, roasted vegetables and cheese kransky are coated in a smoky mustard glaze, creating a filling family dinner with minimal washing up.

Smoky Mustard Glaze

Cooking Instructions
  1. Preheat the oven to 200°C conventional or 180°C fan bake. Line a large roasting tray with baking paper.
  2. Place the potatoes on the prepared tray. Drizzle with 1 tablespoon of olive oil and season with smoked paprika, salt and pepper.
  3. Roast the potatoes for 20 minutes, turning once halfway through.
  4. While the potatoes cook, combine the Dijon mustard, wholegrain mustard, honey, olive oil, smoked paprika and garlic in a small bowl.
  5. Add the sliced cheese kransky, capsicum and red onion to the tray with the potatoes.
  6. Pour over the smoky mustard glaze and toss everything together until evenly coated. Spread the ingredients into a single layer.
  7. Return the tray to the oven and roast for another 20-25 minutes, turning halfway through, until the potatoes are golden, the vegetables are tender and the kransky is lightly browned.
  8. Sprinkle with fresh parsley and serve hot.

Serve on its own or alongside steamed green vegetables and a spoonful of sour cream.
