Ingredients
- 600g baby potatoes, halved or quartered if large
- 4 cheese kranskys, sliced into thick rounds
- 1 red capsicum, roughly chopped
- 1 red onion, cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- Fresh parsley, roughly chopped, to serve
Smoky Mustard Glaze
- 2 tablespoons Dijon mustard
- 1 tablespoon wholegrain mustard
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 clove garlic, crushed
Cooking Instructions
- Preheat the oven to 200°C conventional or 180°C fan bake. Line a large roasting tray with baking paper.
- Place the potatoes on the prepared tray. Drizzle with 1 tablespoon of olive oil and season with smoked paprika, salt and pepper.
- Roast the potatoes for 20 minutes, turning once halfway through.
- While the potatoes cook, combine the Dijon mustard, wholegrain mustard, honey, olive oil, smoked paprika and garlic in a small bowl.
- Add the sliced cheese kransky, capsicum and red onion to the tray with the potatoes.
- Pour over the smoky mustard glaze and toss everything together until evenly coated. Spread the ingredients into a single layer.
- Return the tray to the oven and roast for another 20-25 minutes, turning halfway through, until the potatoes are golden, the vegetables are tender and the kransky is lightly browned.
- Sprinkle with fresh parsley and serve hot.
Serve on its own or alongside steamed green vegetables and a spoonful of sour cream.
