Beef Poke Bowl

Such a simple dish that definitely doesn’t skimp on flavour, this will become a weekly midweek meal for sure. Lots of veggies, flavourful juicy steak and all ready in about 20 minutes!

Ingredients

For the beef:

 

1 packet of the Eye Fillet Steaks (2 x 200g)

2 cloves minced garlic

½ tsp minced ginger

2 tbsp soy sauce

1  tbsp  sesame oil

1  tbsp  sesame seeds

Salt/pepper

 

Other ingredients:

 

1 cup of jasmine rice (uncooked) 

2 radishes thinly sliced

1 avocado sliced

½ cup sliced red cabbage

½ mango thinly sliced

1 red chilli sliced 

½ cucumber sliced

¾ cup edamame beans 

2  tbsp  sesame seeds

3  tbsp  mayonnaise 

1-2  tbsp  sriracha (depending how spicy you like it) 

1 lime 

1 red chilli sliced 

Cooking Instructions

1. Mix marinade ingredients together and coat all over the steaks. Leave on the bench to marinade for 30 minutes while they come to room temperature. 

2. Cook rice in a rice cooker or according to packet instructions. 

3. Prepare all your vegetables. Everything is served raw except for the edamame. To cook edamame, boil a pot of water and once water is boiled blanch the edamame beans for about 30 seconds to 1 minute then remove from water. 

4. Mix together mayonnaise and desired amount of sriracha then add a small amount of water until it becomes a drizzling consistency. 

5. Heat a pan to a medium-high heat and once hot cook your steak for 4 minutes per side for medium-rare or longer if you prefer medium-well. Let steak rest for a few minutes then cut into cubes. 

6. Assemble your bowl with rice first, then top with steak and veggies. Sprinkle with sesame seeds, sliced red chilli, squeeze over some lime juice and drizzle with your spicy Mayo.
