Dairy Free Cashew Basil Pesto

Basil pesto is like the green goddess of sauces and it’s so delicious you can pretty much put it on anything. Add it to chicken, pasta, sandwiches, potatoes, salads, steaks  you name it, what ever you put it on will be good. This is a dairy free version, but pesto is super versatile so if you want to add in some parmesan instead of nutritional yeast then go for it. You can also change the cashews to pine nuts or walnuts to even almonds will all work well. If you have never tried making your own pesto I highly recommend giving it a go. It’s SO easy and tastes so much better than store bought.

1 cup packed fresh basil leaves

½ cup roasted cashews 

½ cup good quality olive oil

3 Tbsp fresh lemon juice 

1 clove garlic 

2 Tbsp nutritional yeast (optional- can sub for grated parmesan if not dairy free)

Salt & pepper to taste

Cooking Instructions

Blend all together in a food processor and adjust salt according to your taste. Store in an airtight container in the fridge for up to 5 days.
