500g Premuim Beef Mince
1 Tbspn olive oil
1 onion diced
3 cloves garlic minced
1 red chilli finely chopped
½ tsp smoked paprika
1 tsp ground cumin
½ tsp chipotle powder
½ tsp chilli powder
1 tsp ground coriander
½ tsp salt
¼ tsp pepper
1 Tbspn chopped fresh oregano
1 Tbspn tomato paste
1 tin kidney beans drained
1 packet of tortilla chips
2 cups grated cheddar
1 avocado sliced or mashed
½ punnet cherry tomatoes halved
1 spring onion sliced
2 radishes sliced
1 tub sour cream
Preheat your oven to 180 degrees. Then heat your oil in a pan on a medium heat and fry your onion, garlic and chilli for a few minutes. Then add in your spices and toast for one minute or until fragrant. Add your beef mince and cook until browned then season with salt and pepper. Next add your tomato paste, fresh oregano and kidney beans. Cook this for about 5 minutes then turn off the heat. In an oven proof dish/tray place a thin layer of your tortilla chips then place a layer of the mince mixture on top followed by cheese. Follow the same steps to create a second layer over the top then place in the oven for 5 minutes or until cheese has melted. Remove from the oven and arrange the spring onion, avocado, radish, tomatoes and sour cream on top.
