500g Premuim Beef Mince
1 Tbspn olive oil
1 onion diced
3 cloves garlic minced
1 red chilli finely chopped
½ tsp smoked paprika
1 tsp ground cumin
½ tsp chipotle powder
½ tsp chilli powder
1 tsp ground coriander
½ tsp salt
¼ tsp pepper
1 Tbspn chopped fresh oregano
1 Tbspn tomato paste
1 tin kidney beans drained
1 packet of tortilla chips
2 cups grated cheddar
1 avocado sliced or mashed
½ punnet cherry tomatoes halved
1 spring onion sliced
2 radishes sliced
1 tub sour cream
Preheat Oven: Preheat your oven to 180 degrees Celsius.
Prepare Aromatics: Heat oil in a pan over medium heat. Add diced onion, minced garlic, and chopped chilli. Fry for a few minutes until softened.
Add Spices: Add your desired spices to the pan (e.g., cumin, paprika) and toast for about one minute or until fragrant.
Cook Beef: Add beef mince to the pan and cook until browned, breaking it apart with a spoon as it cooks. Season with salt and pepper to taste.
Add Flavourings: Stir in tomato paste, fresh oregano (chopped), and drained kidney beans. Cook for about 5 minutes to allow the flavours to meld. Turn off the heat.
Layer Chips and Mince Mixture: In an ovenproof dish or tray, create a thin layer of tortilla chips. Spoon a layer of the beef mince mixture over the chips, followed by a layer of shredded cheese. Repeat this process to create a second layer.
Bake: Place the dish in the preheated oven and bake for about 5 minutes or until the cheese has melted and the nachos are heated through.
Finish and Serve: Remove the nachos from the oven and arrange sliced spring onions, diced avocado, sliced radishes, halved cherry tomatoes, and dollops of sour cream on top.
