1.2kg Pork Belly

3 Tbsp Man Rub

1 Tbsp olive oil


200ml Ding Dong Sauce

50g butter, cubed

1 Tbsp honey

100ml Chicken Stock

Cooking Instructions
  1. Set up your BBQ for low n slow or you can use an oven. You want the temperature to be as close to 130C as possible. If using a BBQ or smoker you can use applewood for wood chunks.

  2. Cut the pork belly into 1 inch cubes, rub in oil and man rub

  3. Place pork belly onto a baking tray and place in the oven or smoker/BBQ

  4. Cook the pork belly bites for 2 hours at 130C

  5. Place all sauce ingredients into a saucepan and combine until butter has melted.

  6. After 2 hours remove pork from the oven or BBQ. COver with tin foil and place back in the oven or BBQ for another 1½ hours

  7. Cook for a further 30 minutes uncovered and and remove from the oven or BBQ  

  8. If the sauce is a little too runny then pour it into a saucepan and reduce to a thick glaze.

  9. Toss the pork belly bites and demolish!
