2-3 large pizza bases (or 4 small single size ones)
1 portion of our home made bbq sauce
500g The Meat Box skinless, boneless chicken thighs
250g The Meat Box gourmet streaky bacon
1 cup sliced mushrooms
½ sliced red capsicum
1 cup baby spinach leaves
½ thinly sliced red onion
1 cup grated pizza cheese
1 Tbsp olive oil
Salt/pepper
Preheat your oven: Set your oven to 180°C.
Prepare the tray: Take a large oven tray and lay the strips of bacon on one half. Place the chicken breast on the other half, then drizzle the chicken with olive oil and season with salt and pepper.
Cook the bacon and chicken:
- Place the tray in the oven.
- After 10 minutes, turn the bacon and cook for an additional 10 minutes.
- Remove the bacon from the tray after a total of 20 minutes.
- Leave the chicken in the oven for an additional 10 minutes (30 minutes total cooking time for the chicken).
Prepare the pizza base:
- While the chicken finishes cooking, spread BBQ sauce evenly over your pizza base.
- Top with spinach leaves, sliced mushrooms, onion, and capsicum.
Prepare the toppings:
- Once the chicken is cooked, shred it into chunks using two forks.
- Slice the cooked bacon.
Assemble the pizza:
- Add the shredded chicken and sliced bacon on top of your pizza.
- Sprinkle generously with cheese.
Bake the pizza:
- Place the pizza in the oven and bake for 15 minutes, or until the cheese is melted and the veggies are cooked.
Finishing touch:
- Drizzle with more BBQ sauce before serving.
