When you marinate a butterflied lamb leg in a bold lemon and oregano marinade, very good things will happen … Specifically, amazingly tender, seriously flavour-infused lamb! Excellent to grill on the BBQ, or roast in the oven.

1T lemon zest

1T fresh oregano, chopped

1/2t dried chili flakes 

1T salt

1kg butterflied lamb leg

2T olive oil

Cooking Instructions
  1. Combine the zest, oregano, chili flakes and salt in a bowl. 
  2. Coat the lamb with the oil and rub with the lemon mixture. 
  3. Heat a chargrill pan over a high heat and cook for 4 minutes on each side. Cover and cook each side for another 4 minutes each. Rest for 5 minutes. 
  4. Delicious served with an olive salsa.
