Lemon & Oregano Butterflied Lamb Leg
When you marinate a butterflied lamb leg in a bold lemon and oregano marinade, very good things will happen … Specifically, amazingly tender, seriously flavour-infused lamb! Excellent to grill on the BBQ, or roast in the oven.
1T lemon zest
1T fresh oregano, chopped
1/2t dried chili flakes
1kg butterflied lamb leg
2T olive oil
- Combine the zest, oregano, chili flakes and salt in a bowl.
- Coat the lamb with the oil and rub with the lemon mixture.
- Heat a chargrill pan over a high heat and cook for 4 minutes on each side. Cover and cook each side for another 4 minutes each. Rest for 5 minutes.
- Delicious served with an olive salsa.
