500g boneless, skinless chicken thighs
1t garlic, minced
Juice and finely grated zest of 1 lime
1T soy sauce
1T olive oil
1t mustard powder
1t dried thyme
1/2c diced pineapple
1/4c red onion, diced
1/4c coriander, chopped
Juice of 1/2 a lime
Salt and pepper to taste
- Add the chicken and marinade to a ziplock bag along and shake around to coat the chicken. Refrigerate overnight if possible.
- Mix the salsa ingredients together just before serving.
- Preheat the bbq grill to a medium heat and cook the chicken for 18-20 minutes, turning frequently, until cooked through.
- Serve the chicken together with the salsa.
