Sausage, Kumara and Feta Frittata

This puffy frittata makes a delicious breakfast, brunch or light dinner with a green salad and crusty bread.

2 Beef Sausages, cut into 2cm chunks

1/4c Kumara, chopped into 2cm cubes

1/2T oil

Salt and pepper 

Handful of spinach, chopped 

60g feta, crumbled 

4 eggs

1/4c mascarpone (or cream)

Cooking Instructions

Preheat the oven to 220°C. Place the sausage and kumara into a 20cm baking dish and drizzle with oil. Season then bake for 15 minutes. 

Whisk the eggs and mascarpone together. 

Remove the dish from the oven and reduce the temperature to 200°C. Add the spinach and feta then pour over the egg mixture. Bake for 25-30 minutes. Serve immediately with your favourite relish.
