1 onion, halved and finely sliced
2 garlic cloves, minced
1 1/2c beef stock
Salt and pepper to taste
Heat the oil in a frying pan over medium-high heat and cook the sausages until browned all over and cooked through. Transfer to a plate and set aside.
Reduce the heat and add enough oil to make around 2T in the pan.
Cook the onion and garlic over 5 minutes, stirring often.
Slowly add the stock and stir as you go to mix well.
Simmer for 2 minutes until it has slightly thickened. Add salt and pepper to taste.
Serve with mashed potatoes and peas.
