For the patties:
500g of Meat Box Lamb Leg Mince
2 cloves minced garlic
50g crumbled feta
2 Tbsps. fresh chopped parsley
2 Tbsps. fresh chopped dill
½ tsp. sumac
Zest of 1 lemon
Salt/ pepper
1 egg lightly whisked
4 Tbsps. panko bread crumbs
For the tzatziki:
1 cup thick natural Greek yoghurt (unsweetened)
½ grated cucumber
Juice of ½ a lemon
1 clove very finely minced garlic
2 Tbsps. chopped fresh dill
Salt/pepper
For the pickled red onion:
1 red onion sliced
½ cup hot water
½ cup white vinegar
1 tsp. salt
2 Tbsps. white sugar
Extra ingredients:
8 slider buns
½ bag fresh rocket leaves
Mix hot water, white vinegar, salt and sugar in a bowl. Add sliced red onions, stir, and set aside to pickle while you prepare everything else.
In a bowl, combine all lamb patty ingredients using your hands until well mixed. Season generously with salt and pepper, then form into 8 small slider patties (wet hands slightly to stop sticking).
Grate the cucumber and squeeze out excess liquid. Mix with the remaining tzatziki ingredients and season to taste.
Heat a grill pan over medium heat with 1 Tbsp olive oil. Cook patties for about 5 minutes per side, or until browned and cooked through.
Assemble sliders with tzatziki, lamb patties, fresh rocket and pickled onions. Serve with salad or hot chips.
