Lamb Sliders

These cute little sliders pack a punch with flavour and again are another quick and easy meal made in under 30 minutes. The lamb patties have garlic, lemon, herbs and feta, then the creamy tzatziki sauce takes these sliders to the next level. Another great one for a weekend lunch or dinner. Serves 4.

Ingredients

For the patties:

500g of Meat Box Lamb Leg Mince

2 cloves minced garlic

50g crumbled feta 

2 Tbsps. fresh chopped parsley

2 Tbsps. fresh chopped dill

½ tsp. sumac 

Zest of 1 lemon

Salt/ pepper

1 egg lightly whisked

4 Tbsps. panko bread crumbs 

 

For the tzatziki:

1 cup thick natural Greek yoghurt (unsweetened)

½ grated cucumber 

Juice of ½ a lemon

1 clove very finely minced garlic

2 Tbsps. chopped fresh dill

Salt/pepper

 

For the pickled red onion:

1 red onion sliced 

½ cup hot water

½ cup white vinegar 

1 tsp. salt

2 Tbsps. white sugar

 

Extra ingredients:

8 slider buns

½ bag fresh rocket leaves 

Cooking Instructions

First mix the hot water, white vinegar, salt and sugar together in a bowl and add the sliced red onions. Set aside and leave to pickle while you prepare everything else. Mix together in a bowl all of the lamb patty ingredients using your hands until well combined. Don’t forget to season generously with salt/pepper. Using your hands form the mince mix into 8 small slider sized burger patties (it may help to wet your hands while doing this to help them from sticking). Grate the cucumber and squeeze out as much excess liquid as you can, then mix this together with all the other tzatziki ingredients, season to taste. Heat a grill pan on medium heat with 1 Tbsp of olive oil and grill the lamb patties for about 5 minutes per side or until browned and cooked through. Assemble your sliders with tzatziki, the lamb patty, fresh rocket and pickled red onions. Serve with a side salad or hot chips.
