Prep time: 5 mins
3 cups of cherry tomatoes (a variety of colours look amazing)
½ cup of torn basil
½ cup of goat feta, cut into cubes
2 Tbsp of extra virgin olive oil
1 Tbsp Fig Balsamic vinegar (optional)
Salt and pepper to taste
Mix all ingredients together, leave to sit for about half an hour before serving, just to allow the flavours to enhance.
