6 Sausage Breakfast Muffins

Ingredients

6 Beef orPork Sausages

1 Tbsp Pepper & Me Italian Stallion

1 tsp Onion Powder

1 tsp garlic salt or powder

½ tsp Man Rub

Pinch of Man Grind

Muffin Splits

Burger Cheese

Free Range Eggs

Cooking Instructions
  1. Cut up baking paper into 6 squares

  2. Preheat oven to 100C, for keeping the food warm

  3. In a large bowl add the Italian Stallion, onion powder, garlic salt, man rub and man grind

  4. Squeeze the meat out of the sausage casings into the bowl with the seasonings, discard the casings

  5. With wet hands evenly mix the sausage meat and seasoning. Divide the meat into 6 even portions

  6. Take each portion of the meat and gently mould into a large round thin patty with your hands on the baking paper. You can make the pattys a little larger than the muffin splits, as the meat shrinks a little during cooking

  7. Stack the meat patties in a container or plate until you are ready to cook, you can also freeze them at this point too.

  8. When you are ready to cook, heat a frying pan with a splash of oil

  9. Place the meat face down into the frying pan and gently remove the baking paper from the top of the patty

  10. Place a cheese slice on top of the patty to slightly melt, once the cheese is slightly melted remove it from the pan and place onto a plate, and keep in the oven to stay warm while cooking the remaining patties

  11. Keep cooking until they are all done as well as toasting the muffin splits

  12. Once each muffin split has cooked, butter each side and pop into the oven to keep warm

  13. Cook the eggs in an egg ring gently sprayed with cooking spray in a frying pan. Once the egg white is cooked, remove it from the pan and place on top of the muffin splits and patties and serve!

Notes:

If you can't find onion powder or garlic salt, you can substitute it with Man rub or Blow my Coals instead.
