1T brown sugar
1/2T smoked paprika
1/2T garlic powder
1/2T dried oregano
1t black pepper
800g pork butt
1/2 onion, diced
1c beer (the stronger, the more flavour)
Green cabbage, shredded
Red cabbage, shredded
Pineapple chunks, lightly charred
- Mix together the rub ingredients and massage over the pork butt.
- Place the onion into a slow cooker, followed by the pork. Pour the beer over top. Cook on low for 10-12 hours.
- Shred the pork and rest in juices for 10 minutes.
- Warm the tortillas and serve with the pork and other serving suggestions.
